Sałatka z burakiem i bakłażanem
Bakłażan z burakiem to jedno z moich
ulubionych późno-letnich połączeń. Miękkość bakłażana idealnie przełamuje lekko twardy burak, a w towarzystwie mango i roszponki jego smak robi się wręcz lekko wytrawny. Sałatkę tę docenią osoby lubiące słodko-ostre nuty, ponieważ całość dopełnia
miodowo-musztardowy dressing.

Dieta: wegetariańska, bezglutenowa
Składniki
300g roszponki
3 długie buraki
1 bakłażan
1 mango
1 avocado
2 łyżki płatków migdałów
Dressing
1 łyżeczka miodu rzepakowego kremowego
(wersja vegańska: miód można zastąpić syropem ryżowym)
2 łyżeczki musztardy (polecam
ekologiczną Byodo)
2 łyżki oliwy z miąższu avocado
Przygotowanie
- Buraka obrać, zetrzeć na tarce w krążki i ugotować na parze przez 20 min.
- Piekarnik nastawić na funkcję grilla na 200 stopni. Bakłażana pokroić w cienkie krążki i położyć na ruszt. Gdy piekarnik osiągnie temperaturę włożyć bakłażany i piec około 10 min aż do miękkości.
- W międzyczasie przygotować sos. Dla lepszej konsystencji wymieszać wszystkie składniki w wysokiej szklance umieszczonej w misce z gorącą wodą. Odstawić do czasu podania.
- Roszponkę umyć, odsączyć i ułożyć na talerzu. Gdy buraki będą gotowe dać im chwilę przestygnąć, tak samo bakłażanom.
- Mango obrać i pokroić w kostkę. Avocado obrać i pokroić w cienkie paseczki.
- Na talerzu ułożyć kolejno roszponkę, buraka i bakłażana, a następnie mango. Avocado położyć na środku.
- Polać sosem musztardowo-miodowym i posypać płatkami migdałów.
Salad with beets and eggplant
Eggplant with beet is one of my favorite late-summer combination. Softness of eggplant ideally breaks slightly hard beetroot, and accompanied by mango and rapunzel the flavor gets even slightly dry. This salad appreciate the people who like sweet and spicy notes, because it goes with honeymustard dressing.
Preparation time: 25 minutes
Diet: vegetarian, gluten-free
Ingredients
300g rapunzel
3 long beets
1 eggplant
1 mango
1 avocado
2 tablespoons almond flakes
Dressing
1 teaspoon honey rape cream (a vegan
version: you can substitute honey with rice syrup)
2 teaspoons mustard (I recommend the
ecological Byodo)
2 tablespoons olive oil from the pulp
of avocado
Preparation
- Peel the beets, grate into rings and make steam for 20 minutes.
- Oven focused on the function of grill to 200 degrees. Eggplant cut into thin rings and put on the grill. When the oven reaches temperatures put eggplant and bake about 10 minutes until tender.
- In the meantime, prepare the dressing. For better consistency, mix all ingredients in a tall glass placed in a bowl of hot water. Let it stand for a while.
- Wash the rapunzel and arrange on a plate. When the beets and eggplant will be ready give them a while to cool down.
- Peel the mango and cut into cubes. Peel the avocado and cut into thin strips.
- On a plate arrange rapunzel, beets, eggplant and mango.
- Avocado put in the middle. Pour the honeymustard dressing and sprinkle with almonds.
